The other day, I went to a Ramen shop selected as Michelin Bib Guruman shortly before the announcement of Michelin.The soup looked like a clear Shio. The blend of chicken and clams was wonderful. The balance between the flavors in the soup made it really delicious. I don’t usually drink up all the soup, but this time I did. Moreover, the taste evolved even further after the soup mixed with the Espuma cream. First of all, the idea of adding Espuma to their Ramen is amazing. The noodles were thin noodles with medium hydration, a good match for the salty flavor of the broth.
