2: Ramen Fujitora 【Amsterdam】



Fujitora opened in February of this year. I’ve been going there every week for about a month since it opened, and it’s really good. This Ramen is of a high standard, even for Japan. What’s even better is that they have a Niboshi Ramen on their menu. Niboshi Ramen is not very popular in the Netherlands, so I have not seen it very often. Therefore, if you go there, you will get to eat a Ramen with a beautiful and clear soup that is also popular in Japan these days. Since the broth is clear, you really get to taste all the ingredients that were used to cook it. Therefore, it gives the whole Ramen a very delicate and subtle taste. Besides, Fujitora is the only place in Amsterdam where you can find such delicious Ramen where everything from the noodles to the broth is homemade and does not rely on MSG.
3: Restaurant Raku 【Uithoorn】



This is a Japanese family style restaurant that serves Ramen at lunchtime and has an izakaya (Japanese bistro) feel at night. Personally, I would recommend their Sushis and Kaisen-don (sea food bowl) if you go there for dinner, as they are both fresh and tasty. However, their Ramens are also of excellente quality, so don’t hesitate to go there for lunch. Moreover, you can order a Ramen set that comes with a handful of handmade gyoza. The gyoza are nicely filled and come with a good crust, which gives them a pleasant crunch. I especially recommend their Miso Ramen, which is made with Nishiyama noodles and has a delicate miso flavour, making it really easy to eat and enjoyable.
4: Yokohama Ramen Saito 【Schiedam】



This is another Ramen restaurant that is very popular among Japanese people living in the Netherlands. But, it’s also very popular among locals. Therefore, every time I go, even if it’s the opening hour, there’s a line. As the name suggests, this is a restaurant where you can enjoy Iekei Ramen, a style that originated in Yokohama. Everything from the broth to the noodles is of course handmade, and the owner seems easy-going. Besides, you can tell from the taste of it that their Ramens are made with care. What I also like about this place is that you can have all-you-can-drink tea for free. It’s self-service, so you can pour it yourself and drink as much as you like. Moreover, iekei Ramens are usually salty, so having unlimited free tea is much appreciated.
