
For years, Smaak Ramen has been winning the hearts of ramen lovers in the Netherlands with their pop-up events in various locations.
I was one of their fans, often visiting whenever they announced a new pop-up. The anticipation for a permanent location was huge – and now, it has finally happened. On August 8, Smaak Ramen officially opened their own shop, and I could not be happier. I have already eaten there three days in a row since they opened.
The People Behind the Bowls

One of the things that makes Smaak Ramen special is not just the food, but the people behind it. The shop is run by a wonderful couple whose warmth and kindness shine through in every interaction. You can feel their genuine passion for ramen and for making their customers happy.
They have poured their hearts into creating a space where anyone can walk in, enjoy a bowl of comforting ramen, and leave feeling better than when they arrived.
The Menu – Simple and Focused



The menu is intentionally kept simple, featuring:
- Shoyu Ramen
- Shio Ramen
- Ebi Wonton Ramen (available with either shoyu or shio broth)
This focused menu allows them to perfect each bowl. During my visit, I had the chance to try both the shoyu and shio versions and they were equally impressive.
The Flavors – A Celebration of clam Umami




Both broths are packed with rich clam umami, giving them depth without being overly heavy. The shoyu comes with medium-thin flat noodles made with whole wheat flour, which give a slightly nutty aroma and a satisfying bite. The shio is served with thin white noodles, delicate yet perfectly suited to the light and clear broth.
Each bowl feels carefully crafted, with the noodles, broth, and toppings working in harmony. The ebi wontons are plump, juicy, and add a luxurious touch to the meal.
A Bowl That Warms the Soul
The standout quality of Smaak Ramen is their gentle, clear dashi-style broth. It is light, comforting, and feels nourishing – the kind of soup you crave on a chilly day or when you need something soothing. For me, this is the type of ramen I’ve been longing to enjoy more often in Amsterdam.
