
I went to the familiar Fuku Ramen again. I’ve introduced it many times already.
Fuku Ramen recently recived 14/20 points from Gault & Millau. It’s amazing that they received it less than a year after the opening. I think it’s going to be harder and harder to get reservations from now on, so if you want to go, I recommend you make a reservation early!
They offer 6 dishes for 77 euros. Plus, if you like, you can add marinated bluefin tuna sashimi with caviar for 12,5 euros. The six-course menu changes regularly. I think this was my 5th or 6th time having dinner there. The menu is always different, so I enjoy it every time. I love restaurants that offer omakase courses because it’s a hassle to choose for myself. Also, when I choose the menu, I tend to be picky, so having an omakase menu like Fuku Ramen is very helpful. All the dishes have been really enjoyed so far.



First of all, before the course meal, there were three small appetizers. All of them had a Japanese flavour and were really great.

The first course was a scallop tempura wrapped in shiso. It was more delicious than I expected. When I was living in Japan, I hated shiso. But after coming to the Netherlands, I tried restaurants like Fuku Ramen which use shiso in a nice ways, I started to like it. It shows that I can still discover new things about food depending on how on it is prepared.

Next is Onigiri. Onigiri food has the image of being cheap and easy to eat, so what is an onigiri in a course meal? That’s what I thought, but it was really good. Charcoal-grilled rice balls are topped with mushroom and butter sauce. The quantity was just right, and the taste was a fusion of European and Japanese cuisines.

Next is Sawara (Spanish mackerel) grilled over charcoal served with kabayaki sauce (Mix a soy sauce, sugar and other things). The whole thing is topped with myoga (Japanese ginger). It went perfectly with the sauce. Also, the mackerel is served with is pickled radish (Daikon) which gives it a nice refreshing addition.

Next is the main Ramen. This time it’s a soy sauce chintan Ramen with a clear soup. It was a broth that was flavoured with duck meat aromas. The noodles were very chewy and very tasty. I like smooth noodles, as they were easy to eat, and those went perfectly with the broth and were really delicious as usual.



Next was dessert, Kakigori (shaved ice). It was delicious! It’s perfect for refreshing your mouth before the main dessert.

The final dessert was ice cream with miso caramel sauce. The mix of sweetness and saltiness may feel weird, but it’s strange how delicious it feels when you eat it.

I say the same thing every time, but this time also I enjoyed every aspect of it. I like sitting at the counter and enjoy watching and talking to the chef as he cooks.
