Is Fuku Ramen Amsterdam Worth €85? A 7-Course Dinner Review

There’s ramen, and then there’s Fuku Ramen. I’ve been meaning to return for dinner ever since my last visit, and when I finally booked a table for the evening course, I was reminded of exactly why this place holds a permanent spot in my list of Amsterdam’s best. This isn’t just a bowl of noodles — it’s a full evening of Japanese fine-dining craftsmanship, from the very first bite to the very last spoonful.

The courses

Before the official course began, I ordered the optional bluefin tuna sashimi add-on. Two beautiful slices — akami and chu-toro, aged for one week — topped with a generous mound of Ossetra caviar and a touch of freshly grated wasabi. The briny pop of the caviar against the clean richness of the tuna set the tone for everything that followed. If you’re going to treat yourself to dinner here, go all the way and order this.

Three delicate amuse-bouches arrive together to open the meal. Clean, precise Japanese flavors — the kind that wake up your palate without overwhelming it. The inari with pickles is a quiet standout: slightly sweet, slightly tangy, and beautifully balanced.

I couldn’t stop staring at it before picking up my chopsticks — easily one of the most visually stunning plates of the evening. And it tastes every bit as good as it looks: clean, oceanic, and refreshing. A reminder that the kitchen knows exactly what it’s doing long before the ramen bowl arrives.


Course ii — Hotate

Scallop done right. Served directly in its shell — a beautiful presentation detail — the hotate arrives silky and sweet, sitting in a light, foamy sauce. It’s the kind of ingredient that speaks for itself when treated with respect, and here it’s treated with nothing but.


Course iii — Hiramasa

And here it is. After four beautifully crafted courses, the shoyu ramen arrives — and it lands exactly as it should. A deeply layered, amber-colored broth with thin noodles, three kinds of chashu, a plump wonton, and binchotan-grilled chicken. Every element earns its place in the bowl. This is refined ramen at its best: complex without being complicated, comforting without being heavy.

Course v — Kakigori

After the richness of the ramen, this arrives like a breath of fresh air. Ruby-red shaved ice topped with a smooth dome of cream and scattered with toasted puffed rice. It’s light, icy, and gently sweet — a perfect palate cleanser before the final course.


Course vi — Tofu & Rhubarb

The final course is understated and surprisingly clever. Silken tofu sits alongside tart rhubarb, crisp rye crackers, and slices of fresh cucumber in a terracotta bowl. It’s gentle and herbal — a calm, considered ending that leaves you satisfied without feeling heavy. Exactly the right note to finish on.


Final thoughts

Personally, Fuku Ramen hits every note for me. I love fine dining, Japanese fusion, and ramen — and this place is all three at once. It’s exactly my kind of restaurant.

Whether you’re a ramen obsessive or someone who’s never thought much about noodles, this is a meal worth going out of your way for. As someone Japanese, I can say with confidence: if Fuku Ramen opened in Japan, it would be a sensation. Fully satisfied from start to finish — and that’s not something I say lightly.

How to get a table

Reservations fill up fast — and I mean fast. Your best bet is to book on the 1st of each month at noon, when reservations open for two months ahead. If you miss that window, keep an eye on their Instagram Stories — last-minute cancellations occasionally pop up there.
